Acitrón Substitute for Rosca de Reyes
20 mins prepServes 12
Acitrón is actually made from Biznaga, an endangered cactus from Mexico. To rescue it, other ways or substitutes have been found to make acitrón look-alike with watermelon rind, grapefruits, pear, apple, guava, figs, gummies, and many other options.
Peel and cut into small strips the rind (from both grapefruit and watermelon). Add it to a pot and cover with water, add 2 cups of sugar and food colorant. Let it cool down before using it.
