To celebrate the first day of ๐ณ๏ธโ๐Pride Month, I turned this popular Mexican dessert into a rainbow. This is made differently in every region. I like it with cream cheese for a more creamy consistency. The Marias cookies are the star of this creamy and cold dessert.
In a blender, add the media crema, condensed milk, cream cheese, and lime juice, and blend until there are no lumps of cream cheese. Divide the mix into six equal parts, the closest you can, in 6 small bowls or containers, and color each part with a different color with the food colorants. You need a 10 inches silicon mold; If you use a metal or glass pan, cover the inside with plastic wrap with the fewer wrinkles possible; following the rainbow colors, add the purple mix first, then a layer of Marias cookies, and braking some into pieces to fill the empty spaces, then slowly add the blue mix on top following with a layer of cookies and repeat this steps continuing with the green, yellow, orange, and finishing with the red mix and a layer of cookies on top. Cover with plastic wrap and seal the best you can to put in the fridge for at least 4 hours or, even better, overnight. Then transfer it to a tray and cut as you like; This will be like a hard ice cream, be careful when cutting it, and this is meant to be eaten right away after serving, or like an ice cream, it will melt.
