Carne en Salsa (Beef with Spicy Salsa)

Start making the salsa, adding the peppers, celery, tomato, and garlic cloves into a pot and add enough water to cover; put the lid on and boil for 15 minutes. Add everything in the blender with the fresh cilantro and some or all the water from the pot; it depends on how thick you would like the salsa and reserve. In a skillet on medium heat, add the oil and the green onions, stir, and cook until the onions are slightly golden brown. Remove them from the skillet and reserve them for later. season the beef with salt, pepper, celery salt, and cumin. Add the beef into the skillet with the garlic and cook until the liquid dries up, then add the onions and the salsa. Cook for about 2 minutes and done. Enjoy in a taco or with rice and beans on the side.
