In a hot disco, skillet, or wok, add the bacon and cook until it releases its fat. Then add the chorizo, breaking any chunks with a spoon, and cook until it releases its fat. Add the beef and cook until it changes color. Then add the pork and cook until it changes color, and add the chicken, cooking it similarly until it changes color. Season with salt and black pepper. Add the minced garlic and chopped onion, and cover to cook until the onion is soft. Add the grill sausage, bell peppers, onion powder, paprika, beer, and tomato paste. Mix and incorporate all the ingredients, then cover and cook until the liquid dries up. Serve in corn tortilla tacos or in quesadillas.
