Green Beans and Ground Beef Stir Fry
15 mins prepServes 4
This dish is inspired by Chinese green bean and ground beef stir fry but cooked with a Mexican picadillo twist. It incorporates spices typically found in Mexican ground beef dishes with vegetables.
Clean and cut the green beans. In a wok or pot, add cooking oil (enough to deep fry the green beans) and put it on high heat. Wait until the oil gets very hot and carefully add the green beans, ensuring they are well dried before adding them to the oil. You might need an oil splatter guard for safety. Fry for 4 minutes, then remove and let them drain in a strainer inside a bowl. Remove all the oil from the wok or pot to use it next or use another one. In a bowl, add the meat and all the spices with the jugo maggi, and mix well. Add the seasoned meat to the wok or pot with just enough oil to cook. Break the big pieces of meat with a spoon or potato masher. Add the minced garlic. When the meat is fully cooked, add the green beans and cook for 2-3 minutes, stirring constantly. Serve with white or Mexican rice.
