Habanero Pork with Butter Garlic Rice

To make the salsa, add the garlic cloves, onion, habanero peppers, and green or yellow tomatoes to a pot and cover with water. Boil for 15 minutes or until the veggies are tender. Blend it all and set it aside.

To make the rice, add cooking oil to a pan and fry the white rice until slightly golden brown, then add the butter and minced garlic cloves, stir, and add the chicken bouillon and salt along with the hot water. Put the lid on. When it starts boiling, turn the heat to the lowest. Cook on low heat for 15 minutes or until the water dries out and the rice is soft. Take the lid off and let the steam out so the rice doesn’t overcook.

In a pot, add the lard, and when it is melted, add the diced pork meat. Season it with salt and pepper to taste, and fry until slightly crispy. Add the bell peppers and the prepared salsa, and let it simmer for 15 minutes. Serve with corn tortillas on the side.
