add the yeast to the warm water and let it rest. At the same time, you mix the ingredients for the dough, mixing first the dry ingredients, then adding the eggs and margarine until everything is well incorporated, then add the milk and the yeast mix, and knead by hand or in the mixer for 10- to 15 minutes. The dough should be slightly sticky. Put it in a greased bowl, cover it with plastic or a cloth, and let it rest until it doubles the size. Mix all the ingredients for the decorating paste until you get a smooth dough, separate it into seven equal parts, and color it with the rainbow colors. divide the dough into 16 equal parts and form balls, put them on sheets pans with parchment paper, place eight balls on each pan, then rub shortening on your hands and press each ball. divide the paste into 16 parts and make flats with your hands or a tortilla press using 2 pieces of plastic and put them over each ball, if you don’t have a concha mold, use a can, or a measuring cup to make the concha shape on top. cover with plastic or a cloth and let them double in size. If your kitchen is cold, the dough will take a long time to rise. bake at 350 F for 20 minutes, then turn around the pans so the conchas bake evenly and bake for another 10- 15 minutes. dough should be golden brown but the paste shouldn’t turn brown at any point.
