Pumpkin Spice Delight with Butter Pecan Ice Cream

1. Prepare the pumpkin: Remove the seeds, peel the skin, and cut the pumpkin into small, bite-sized chunks.
2. Season: In a large bowl, combine the pumpkin, brown sugar, pumpkin pie spice, cinnamon, vanilla, and water. Mix until everything is well coated.
3. Bake: Transfer to an oven-safe baking dish and place the butter on top. Cover tightly with aluminum foil and bake at 350°F (175°C) for approximately 45 minutes, or until the pumpkin is tender.
4. Finish: Remove the foil and gently break some of the pumpkin into smaller pieces with a spoon, leaving plenty of chunks. Don’t drain the liquid! That delicious pumpkin syrup is exactly what we want.
5. Serve: Spoon the pumpkin and plenty of its syrup into a bowl while it’s still piping hot. Top with a generous scoop of butter pecan ice cream and enjoy as it melts into the pumpkin!
