Some people in Mexico call this “Poor’s Man Food” and may be true because it’s so cheap to make it and it will serve a whole family. The truth is that is one of those comfort meals, so simple, easy, and delicious.
Add the veggies (Roma tomatoes, onion, garlic cloves) and some water to the blender, blend well, and set aside. In a pan with cooking oil, fry the fideo noodles until golden brown. Then add the blended veggie mixture along with the rest of the water and the chicken bouillon. Season with salt to taste and let it cook for about 10 minutes or until the fideos get bigger and tender. You can also use chicken broth instead of water and skip the bouillon.
