Spicy Watermelon Popsicle

Add the watermelon, water, and the Thai chili pepper honey, and blend; if your watermelon is not seedless, strain it into a pitcher; add the chamoy and about a 1/4 cup of tajin and mix; fill the popsicle mold but leave about 2 centimeters of space for the green mix; insert the sticks and freeze for at least two hours. In the blender, add the rind, lime, 4 cups of water, and more Thai chili pepper honey and blend; strain it into a blender to get only the liquid out; add food colorant for a brighter green color and fill the rest of the mold to the top with the green mix and freeze for at least 3 hours. Submerge the bottom of the mold in warm water to take the popsicles out of the mold easily; put each popsicle in a small plastic bag or sandwich zip bag to keep them in the freezer, ready to grab and go. You can add more tajin when eating it.
