Vaca Frita

Sear the beef on all sides and then add water, salt and bay leaves. If cooking in the pressure cooker, cook for 45 minutes on high, or in a pot until tender and easy to shred. When done, shred it and marinate with minced garlic, black pepper, and lime juice for at least 30 minutes. Then fry with cooking oil in a skillet until it is half crispy, then add the onion and cook until translucent. Rinse off the rice until water comes out clear, drain it and follow the rice cooker instructions or measurements. If cooking it in a pot, add all the ingredients in the pot on high heat and when it starts boiling turn it down to low, cover with the lid and cook for 10-15 minutes or until the water dries up. Serve the vaca frita with a side of rice and lime wedges, garnish with parsley.
